重金属元素摄入总量与健康安全评估——以湖南洞庭湖地区为例

    Intake amount of heavy metal elements and health and safety assessments—A case study of the Dongting Lake area, Hunan

    • 摘要: 粮食中重金属元素的含量水平直接关系到人体健康和社会安定与发展,是粮食安全性的重要反映。以洞庭湖产粮区系统采集的180套水稻、120件蔬菜样品为基础,采用相关标准分析、评价了样品中Cd、Hg、Pb、As等重金属元素的分布情况和安全性。研究结果表明:在以稻米为主食的每人日摄入量中,Hg、Pb均没有达到ADI(日允许摄入量)的限值,食品相对安全,而Cd的食品安全令人担忧。研究区稻米中绿色食品比例仅为60%,食品安全形势不容乐观,必须采取措施,保障人体健康的安全。

       

      Abstract: Contents of heavy metal elements in food are directly related to human health and social stability and development and are important reflection of food safety. Based on 180 sets of rice samples and 120 pieces of vegetable samples collected systematically from a grain-producing area of the Tongting Lake, the authors analyzed and evaluated the distribution and safety of some heavy metal elements such as Cd, Hg, Pb and As by using the state relevant standards. Study shows that the daily intake amounts of Hg and Pb in rice-dominant food per person do not reach the limit values of Acceptable Daily Intakes (ADI). So the food is relatively safe. However, the safety of food containing Cd makes one worried. In fact, the percentage of green food in rice in the study area is just 60%. The situation of food safety in the study area is not optimistic. So it is necessary to take effective measures to reduce the risk of heavy metals and guarantee human health.
